I’m inspired to continue on my journey. Finding time to read has been difficult, but I’m encouraged by the stories in the Bible which shows how God can and does work in the lives of those who trust and serve Him.

Today I was struck by a passage related to the power of words in one’s ability to build up or tear down. In today’s reading, Issav told Esau to go out and catch game and to return to acquire his blessing. Being an obedient son, Esau went out to do as his father had said. Long story short…Jacob (& Rebekah) tricked Esau and Issac spoke words of blessing over Jacob instead of Esau. When Esau returned to receive his blessing from his father, his father told him that he has already given him his blessing – even though the blessing was actually given to Jacob.

I guess this reminds me how important it is to hold my tongue even when I want to say things about or to people. Words can either bless or convict, build up or tear down.

Amen!

I’ve started my session on reading the bible in 90 days. I’m amazed at how much more I’m learning from the beginning books of the Bible. I thought I would remember it all from grade school or reading it in the past. I guess for me, I’m most encouraged by reading about how gGod is working in the lives of those who love and serve Him.

Here are some of my favorite passages and observations from today.

Genesis 3:13
Then the Lord God said to the woman, “How could you have done such a thing?” She answered, “The snake tricked me, so I ate the fruit.”

This is a very interesting passage for me. As a mom, I’m reminded of when my daughter does something that is not right and tries to place the blame on someone else for the choices she has made.

I really enjoy God’s response to her, the snake and the man upon their disobedience of him. God no only punishes the snake for presenting the bad behavior, but the woman for listening to the snake and the man for listening to his wife. No matter if someone else caused any of them to do it, they were all responsible for their actions and they all had to deal with the consequences of those actions.

I do try to remind my daughter every day that she has a personal choice that she makes we she does things that are not biblical. And that when she needs help with any aspect of making decisions, she can pray to God and ask Him for his guidance and wisdom.

Genesis 4:7
If you do things well, I will accept you, but if you do not do them well, sin is ready to attack you. Sin wants you, but you must rule over it.”

What an awesome passage of scripture! I don’t think I have ever seen it written like this before. It really makes you see God for who he is and what he is about. The bible says that Cain brought some food from the ground as his gift, but Abel brought the best parts of some of the first born of his flock.

He even tells Cain, to do things well and be accepted by the Lord. Obviously Cain wasn’t doing his best and sin was at his door. I’m not sure I understand this aspect of what he said to Cain completely, but I do know that when he tells us that we must rule over sin, we must not allow any aspect of it in our lives lest we be tempted to wander down it’s path.

Genesis 9:3

3 “Everything that moves, everything that is alive, is yours for food. Earlier I gave you the green plants, but now I give you everything for food.

And now, after the pouring out of rain from the ground and sky on all of the earth to destroy those outside of Noah, his family and the animals God commanded him to bring on the ark, God has granted man the opportunity to enjoy everything that is alive for food.

I haven’t formally taken the time to sit down and write a list of things that I want to do this year, which I still would like to do – when I have the chance – but I have thought about one thing that I have wanted to do for some time that I haven’t ever gotten around to doing in my life….reading the entire Bible – in 90 days!

I’m sure the process will be challenging as it requires me to devote a chunk of my day – outside of daily devotions – to reading the word and listening to hear what God wants me to hear as it relates to each passage.

I didn’t do a serious investigation trying to find the BEST study guide, reading guide or kit to master this feat, but I did Google it and came across a file which has a schedule, a reading program that I can follow and will complete my course of reading in 88 days with two days of grace in case I don’t get to it all.

I’m excited not only to read, but also to hear what God has for me as I embark on this journey.

Our family has one car. Once or twice, sometimes three times a week, we will drive Greg to work so that we have the car for the rest of the day. It’s not that we spend all day out and about, but just having it in case we want to get out and about is peace of mind.

On those days, our mornings begin rather earlier – as Greg needs to be at work by 730A. Luckily for us, he works only 15-20 minutes away – depending on traffic. But, to get two kids dressed, fed, Greg’s lunch made (on days he is not eating out), and getting out the door feels like a major ordeal – or accomplishment – depending on the day.

Well today was definitely an accomplishment! And while I felt completely wiped out after arriving back home with the kiddos a little after 8 AM, I got up and took the kids to Barnes & Noble for story and play time at 1030A. We arrived home and have accomplished alot today.

Anise & Date Scones

Rice Krispy Treats w/ Chocolate

Dried Pineapples

Part 2: Tamales

And now we are on to Checkerboard Cookies…

…to be continued….

SCONES

**Cut 2 sheets parchment paper to 11X14 to line baking dish

**Sift flour, sugar, baking powder, and salt together into a mixing bowl. Add crumbled Jo Joe’s to mixture. Make a well in the center of the mixture.

**Add the cream to the flour mixture and stir by hand just until batter is evenly moistened.

**Place the dough in the lined baking dish and press evenly. Press triangles of remaining 5 Jo Joe’s Cookies (or Oreo’s) into dough. Cover dough with second sheet of parchment paper. Freeze dough until very firm – at least 12 hours.

**Thaw dough for 5 minutes at room temp. Cut dough into two equal rectangles (three rectangles for smaller scones) – lengthwise. Then cut large rectangles into triangles until you have 8 scones. You can cut into smaller triangles if you wish.

**Bake until golden brown, 25-30 minutes for smaller scones. 30 to 40 minutes for larger scones. Cool scones on pans for a few minutes. Transfer to cooling racks. Serve at room temp.

**Pipe over scones. Set it refrigerator for 15 minutes to set frosting. Enjoy!

Yesterday we put up our Christmas tree. It’s not glamorous…or fancy by any means, but we did it with the help of a 5 year old and a 1 year old.

Notice that most of the ornaments are at waist level for most adults…that was the highest point Miss D could reach. )

I really love this time of year.

I LOVE the smell of Christmas trees and cinnamon from the kitchen or from cinnamon brooms you can buy at Bed Bath and Beyond)

I LOVE the deals and sales you can find on things that I need (or don’t – really, but must buy just because they are on sale).

But, I LOVE most of all the reason for the season…which I think very often gets sidelined because of all of the busy-ness the Christmas season brings with it. This season is really about the birth of Christ and his promise for us in our lives…

And while the promise of Christ may not be real for some people – as they still haven’t experienced God as a personal friend and Savior – it’s a great time

This year, as my kids are getting older, Greg and I decided that it is time for our family to begin some Christmas traditions. And for me, the concept of traditions is difficult as the childhood we are creating for our children is much different from what I remember experiencing as a child.

I don’t remember doing anything special leading up to Christmas day – aside from Christmas mass, Advent Sunday services at church and then the morning Christmas rush to see what we had waiting for us. So, we came up with our own.

ELF ON THE SHELF

For those who haven’t heard of this tradition, it is a fun one – and a new one for me too. The concept it cute… there is a story which you read to the kids on a daily or weekly basis, and a doll – an elf – sits on the shelf watching the kids to report to Santa who has been naughty and who has been nice…. (We named ours Strawberry. Daphne’s idea, of course). I love, love the idea. But the best part for me is the part where the elf flies to Santa each night to report who has been naughty and nice and returns to a different spot in the house.

Last night was the first time we read the story. And this morning was the first morning they set out to look for their friend Strawberry. It was so much fun for me and them. Elliot is still too little to really understand what is going on, but he had fun chasing Daphne around the house as she searched for Strawberry. Twenty minutes or so later, Daphne located Strawberry, the elf, on the shelf in the dining room. She is excited to go to bed and wake up tomorrow to go on a hunt to find her friend Strawberry.

THE ADVENT CALENDAR

Advent is a special season, for kids and adults, as it is the time of year leading up to the day we celebrate the birth of Christ. And while many kids (and adults) see it as merely a time leading up to the day when they get to open the stash of goods they will get on Christmas day, for me I share in the excitement and anticipation Mary must have experienced as she waited for her son to be born.

For our family tradition, we visited Trader Joe’s and purchased an advent calendar. The calendar is basically a piece of decorated cardboard with 24 pieces of milk chocolate hiding in 24 individually closed pockets. Each day, leading up to Christmas day, one pocket it opened and a piece of chocolate is revealed… YUM! It’s a good reminder for me to remember to anticipate and not expect things immediately. In the end, the reward is received with more gratitude and enjoyed more.

GINGERBREAD HOUSE

Full kit purchased @Trader Joe’s for only 7.99.

Today, we spent the day making a gingerbread house. With little kids, I really thought the process was going to be a disaster to begin with … until I remembered why I have chosen to do traditions. I want my kids to remember. I want them to learn to do things on their own. And what better way will they remember or learn how to do things than during the holiday season.

The kit took a bit of preparatory work on my part to get started…but once I beat the egg whites until they were still (with the help of my KitchenAid mixer), added the confectioners sugar, and a little bit of vinegar and added all of this to a pastry bag, the rest was up to the imagination of D and E.

Our gingerbread house turned out great.

So, this year is the beginning of our family Christmas traditions….what are some Christmas traditions that are special to you…that you remember from when you were a child?

Tonight I decided I would attempt to make a dessert that many of my friends – mostly from CANADA – have been talking about for a long time…and for good reason too. They are NANAIMO bars. They are named for a city in British Columbia where – in the 1950s – Mabel Jenkins, a housewife created and submitted the recipe for a local cookbook. And it was ultimately a hit.

I’m sure there are many recipes for nanaimo bars, but I kept it simple in my search for one…and chose the first one that popped up on google.com. However, the recipe I had called for things I did not have in my pantry or didn’t want to use, so as always I improvised. (I mean, what is cooking without a little improvisation, right?

So here is my take on NANAIMO bars.

BOTTOM LAYER SECOND LAYER THIRD LAYER

½ C unsalted butter ½ C unsalted butter 4 oz semi sweet chocolate
¼ C sugar 2 T & 2 t cream 2 T unsalted butter
5 T dark cocoa 2 T vanilla custard powder
1 egg, beaten 2 C icing sugar
1 ¾ C Ritz Crackers
1 C coconut

Line 8X8 pan with wax paper

BOTTOM LAYER: Melt butter, sugar, and cocoa in double boiler. When melted, add egg. Remove from heat. Add ritz crackers (crumbled) and coconut. Press into 8X8 pan.

SECOND LAYER. Cream butter, cream, custard powder, and icing sugar until light and fluffy. Spread over BOTTOM LAYER.

THIRD LAYER. Melt chocolate and butter in double boiler – until shiny and smooth. Pour over SECOND LAYER.

Use microplane to dust top of chocolate with nutmeg. Refrigerate as needed to get allow the chocolate to set. Enjoy!

Having never had any other nanaimo bar before, I can’t say these are the best ever, but my husband enjoyed them and that is what matters, right? Would love to hear how you make nanaimo bars!!! What’s your secret ingredient???

Saw something interesting the other day – which I have never seen before – ever in any other city I’ve visited or lived in. People were standing on the median – in the middle of the street – not even near a light…with stacks and stacks of newspapers there. And people were stopping either buying them or just grabbing them. Very interesting I will say. Normally, I wouldn’t say anything about this type of behavior, but it was seriously messing up traffic – even more so than traffic normally is…and that is saying something significant about Baltimore.

Will have to take a picture next time.
